Lasang Pinoy 16: Pinoy Food Gifts - Butter Tarts




This is my first time to join a Lasang Pinoy event and I am so excited. While I know that the ultimate goal of Lasang Pinoy is to promote Filipino food, I chose this item because, though it is not a Filipino tart, it would certainly appeal to the Filipino dessert palate.











Butter tarts are a traditional Canadian dessert. If you go on the internet, you'll find over a million and one recipes for it. I first tried it from my work mate who has a family recipe she follows regularly. Despite its Canadian provenance, it reminded me of the type of desserts we like to give away during the Christmas holidays back home.

Its sweet, a little gooey with a nice buttery crust. Almost like our old fruit boat tarts from back home with the little swirl of merengue on top (by the way, I don't hear of anybody making them anymore). Raisins are an integral part of the tart.

While I did not give this away this year because I was too ambitious about taking on a part time holiday job (see previous posts). I am certainly planning to make this part of my Holiday gift giving repertoire.



Butter Tarts
1 C Brown Sugar
2 Eggs
1 C Raisins
1 T lemon juice
1/2 melted butter
Pre-made Pie Crust (I used store bought)

Soak raisins in light rum (optional)
Preheat oven to 350 degrees
On a floured counter top or cookie sheet, roll our pie crust to about 1/4-1/8 inch
Using a cookie cutter or wine glass, cut out about 24 circles (for a mini muffin pan)of pie crust
Mix together melted butter, eggs and brown sugar until smooth
Drain and add raisins.
Add lemon juice
Mix thoroughly.
With fingers, gently press pie crusts into each greased (I use Pam for baking spray) muffin cup of the pan
With a spoon, fill each cup with filling upto 2/3 of the way (Do not over fill as the filling can boil over while baking)
Put into the oven and bake for about 15 to 18 minutes or until crust is golden brown and the filling is set, but not firm.
Remove each tart and allow to cool.
Makes about 24 tarts.

Yum! Butter tarts...sounds really good...and I was thinking of boat tarts as you were describing them :) Great first entry...keep on joining!

I too have resolved to give home made presents next year :)
